I would simply say that capitalism is the exchange of goods and/or services between two or more willing parties.

It's still possible for everyone to get richer even in a situation where the contrast between the richest and poorest increases. It's not necessarily mutually exclusive like a see-saw; it only tends to be mutually exclusive in a more centrally planned system.
